Peking Chicken by Chef Gulzar

Ingredients:
- Whole chicken with skin 1-1/3 to 1-1/2 kg
- Oyster sauce 4 tbsp
- Dark soya sauce 6 tbsp
- Star anise 4
- Paprika powder 1 tsp
- All spice powder 1/2 tsp
- Garlic 6-8 cloves
- Chicken stock 4 -5 cup
- Oil for fry
Method:
- Put stock, oyster sauce, soya sauce, all spice powder, garlic, paprika and chicken in pan, cover it and cook until chicken tender.
- Turn chicken during this time.
- Now take out chicken and keep on strainer so that all water dries.
- Strain remaining sauce and cook until sauce is thick.
- Peking sauce is ready.
- Put chicken in empty pan.
- Now heat oil and put on chicken until oil is garnished on chicken on all sides.
- Then take out chicken and serve with peking sauce.
Peking Chicken is a Chinese dish. It is prepared with whole chicken and served with peking sauce. Chef Gulzar has made this recipe with his technique.
