Chicken Curry by Zarnak Sidhwa

Ingredients:
- Chicken 1 kg
- Oil 2 tbsp
- Vinegar 2 tbsp
- Desiccated coconut 1-1/3 cup
- Crushed garlic 4 tbsp
- Cumin 1 tsp
- Ground turmeric 1/2 tsp
- Red chili powder 1 tsp
- Crushed black pepper 1/2 tsp
- Chopped ginger 1 tsp
- Curry leaves 10
- Sugar 1 tbsp
- Boiled rice for serve
Method:
- Put chicken pieces in saucepan, cover with water and bring to boil.
- Then increase flame and cook till chicken tender.
- Then take out water and keep 1 cup.
- Now heat oil in saucepan, add vinegar, coconut, garlic, cumin, turmeric, red chili powder, black pepper, ginger and curry leaves and saute for 2 minutes.
- Then add chicken pieces, add remaining stock and sugar and bring to boil.
- Now reduce flame and simmer it for 15 minutes.
- Then serve with boiled rice.
Chicken Curry is delicious dish. It is common dish in Pakistan. The flavor of curry leaves is aromatic. It is served with rice or roti.
