Barri Pulao by Chef Tahir Chaudhry

Ingredients:

  • Rice 2 cups
  • Bari 300 gm
  • Potato 2
  • Oil 1/4 cup
  • Onion 1
  • Garlic 1 tsp
  • Ginger 1 tsp
  • Tomato 1
  • Green chilies paste 4
  • Cinnamon 1
  • Whole black pepper 10
  • Cloves 4
  • Bay leaf 1
  • Whole cumin 1 tsp
  • Salt 1 tsp
  • Tara garam masala 2 tsp
  • Red chili powder 1/4 tsp
  • Fried onion 2 tbsp
  • Mint leaves 2 tbsp

Method:

  1. Heat oil in pot, add onion, black pepper and whole cumin and fry until golden brown.
  2. Add tomato, ginger, garlic, green chilies paste, red chili powder, salt, bay leaf, tara garam masala, cloves, cinnamon, barri and potato and cook until potato is soft.
  3. Then add 3 cup water, boil it, add 2 cup water and cook until water dries.
  4. Now cover it, simmer it, garnish with fried onion and mint leaves and serve hot.
