Punjabi Curry

Ingredients:

  • Yogurt 1/2 kg
  • Spinach 1/2 kg
  • Chaj 1/2 liter
  • Gram flour 250 gm
  • Turmeric 1 tsp
  • Salt 1 tsp
  • Crushed red chilies 1 tbsp
  • Fenugreek seeds 1 tbsp

For Tarka:

  • Garlic cloves 6
  • Round chilies 6
  • Curry leaves 6
  • Oil 1/2 cup
  • Cumin 1 tsp

For Pakora:

  • Gram flour 250 gm
  • Chopped onion 1
  • Cumin 1 tsp
  • Red chili powder 1 tsp
  • Salt 1/2 tsp
  • Oil as required

Method:

  1. Heat oil and put fenugreek seeds.
  2. When aroma comes, add spinach.
  3. Also put red chilies, turmeric and salt and roast it.
  4. Then beat chaj and gram flour nicely, add spinach and cook on low flame for 30 minutes.
  5. For pakoray: Make pakoray of gram flour, onion, cumin, red chili powder and salt and fry in oil.
  6. When curry cooks, put pakoray.
  7. Then heat oil, fry garlic, round chilies, curry leaves and cumin and put on curry.

Punjabi Curry is Indian curry. It is prepared with gram flour & yogurt with onion pakora and served with rice.
