Thai Chicken Biryani

Ingredients:

  • Chicken whole 1 kg to 1-1/4 kg
  • Sela rice 1/2 kg
  • Turmeric powder 1 tbsp
  • Coriander powder 1 tbsp
  • Crushed white pepper 1 tbsp
  • Cumin powder 1/2 tbsp
  • Garlic paste 3 tbsp
  • Cinnamon 4-5
  • Star anise 4-5
  • Lemon 4-5
  • Fried onion 2
  • Chinese salt 1/2 tsp
  • Oil or Ghee 1/2 cup
  • Salt to taste

Method:

  1. For chicken: Cut chicken into 4 pieces.
  2. Put oil or ghee in pot, add 2-3 star anise and cinnamon and crackle it.
  3. Now add 2 tbsp garlic paste and fry it.
  4. Then add turmeric powder, coriander powder, cumin, salt and Chinese salt and roast it.
  5. Now put water and chicken pieces and cook until is chicken tender.
  6. Then separate chicken pieces, strain mixture and keep it aside.
  7. For rice: Put oil in other pot, put remaining star anise, crackle it, put remaining garlic paste and cook until aroma comes.
  8. Now put chicken stock and rice and fried onion.
  9. When rice is ready, put chicken pieces on top of it and simmer it.
  10. When simmer is completed, put rice, chicken pieces, fried onion and lemon juice and serve it.
  11. Thai chicken biryani is ready.
