Dorset Apple Cake

Ingredients:
- Flour 1-3/4 cup
- Baking powder 1 tsp
- Baking soda 1 tsp
- Cinnamon powder 1 tsp
- Cloves powder 1/2 tsp
- Nutmeg powder 1/4 tsp
- Salt 1/4 tsp
- Unsalted butter 1-1/4 cup
- Light brown sugar 1 cup
- Caster sugar 3/4 cup
- Eggs 4
- Buttermilk 2/3 cup
- Vanilla essence 1 tsp
- Peeled & chopped apples 1-1/4 pound
For Apple Rosettes:
- Apple juice 2 cups
- Lemon juice 1/4 cup
- Apples 3
For Topping:
Method:
- Mix flour, baking powder, baking soda, cinnamon, nutmeg, clove and salt nicely.
- Add butter, brown sugar and caster sugar in other bowl and beat it nicely.
- Now add eggs one by one.
- Then mix buttermilk with flour mixture nicely until combined.
- Now add vanilla essence and 3/4 cups apples.
- For baking: Put batter in pan.
- Now put remaining apples on batter.
- Now sprinkle remaining brown sugar.
- Then bake in oven for 55 minutes or till toothpick comes out clean.
- Now keep cake on pan and cool it completely.
- Then take out from pan, keep on wire rack and cool it completely.
- For apple rosettes: Combine all ingredients together and cook in pan on low flame.
- Then give shape of rosettes and brush with lemon juice.
- For assemble: Spread apple glaze on cake and sprinkle rosettes.
- Now serve with cream.
