Citrus Bursts

Ingredients:
- Butter 5 oz
- Caster sugar 5 oz
- Eggs 2
- Self raising flour 5 oz
- Lemon rind 1 tsp
- Lemon juice 2 tbsp
- Orange juice 2 tbsp
For Topping:
- Icing sugar 5 oz
- Water 2 tbsp
- Yellow color few drops
Method:
- Beat butter and sugar until light and creamy.
- Now put eggs, flour, lemon juice and orange juice and beat until smooth.
- Then put lemon rind, put mixture on paper cases and bake for 15 minutes on 180 degrees C.
- Then take out on wire rack and cool it.
- For topping: Sieve icing sugar.
- Now add water and beat until smooth.
- Add yellow color in icing sugar, spread on cup cakes and serve.
