Coffee Walnut Cake

Ingredients:

For Sponge:

  • Walnuts 50 gm
  • Caster sugar 225 gm
  • Unsalted butter 2250 gm
  • Flour 200 gm
  • Coffee powder 4 tsp
  • Baking powder 2-1/2 tsp
  • Soda bi carb 1/2 tsp
  • Eggs 4
  • Milk 1-2 tbsp

For Butter Cream Frosting:

  • Icing sugar 350 gm
  • Unsalted butter 175 gm
  • Coffee powder 2-1/2 tsp
  • Chopped walnuts for decoration

Method:

  1. Put walnuts and cater sugar in grinder and grind it.
  2. Now put in food processor, add butter, flour, coffee powder, baking powder, soda and eggs and make smooth batter.
  3. Then add milk and mix it.
  4. Now divide mixture in 2 greased tin.
  5. Then keep tin in oven and bake on 180 degrees C for 25 minutes or cake rises.
  6. Now keep cake on wire rack and cool it completely.
  7. For frosting: Beat butter, add icing sugar and beat until smooth.
  8. Then dissolve coffee powder in 1 tbsp boiled water and blend with butter cream.
  9. Now keep 1 sponge cake on serving plate, spread half frosting and keep 2 sponge.
  10. Then spread remaining frosting, put chopped walnuts and serve.
