Ingredients:
- Sugar 1 cup
- Eggs separated 8
- Ground cinnamon 1 tsp
- Salt 1/4 tsp
- Zest of lemon grated 1
- Ground almonds 1/2 cup
- Chocolate 1 cup
- Flour 1-1/2 cups
- Coffee 1 cup
For Topping:
For Chocolate Icing:
- Chocolate chopped 8 oz
- Water 1/2 cup
- Milk 1/4 cup
- Butter 1/4 cup
- Icing sugar 1/4 cup
Method:
- Beat egg yolks, add sugar, cinnamon, salt and lemon zest.
- Add ground almonds, chocolate and flour and add in coffee.
- Beat egg whites until stiff.
- Grease and flour loaf pan or Rehrucken pan.
- Bake at 190 degrees C for 30-45 minutes or until done.
- Let cool.
- Remove from pan and ice when cold with chocolate icing.
- Insert silvered almonds in rows.
- For icing: Combine chocolate, water, milk in double boiler.
- Heat chocolate until melted.
- Remove, add butter and icing sugar.
- Stir until smooth.
Rehrucken is an Austrian pastry. It is prepared with chocolate & almonds, covered with chocolate icing & topped with almonds.
