Roasted Cauliflower Soup

Ingredients:
- Olive oil 3 tbsp
- Butter 4 oz
- Cauliflower 1
- Garlic 1 pod
- Salt 1 tsp
- Salt, Black pepper to taste
- Milk 1 cup or as required
- Vegetable or Chicken stock 8 cups
- Onion 1
- Brown sugar 1 tsp
- Croutons for serving
- Cheese for topping
- Nutmeg pinch
Method:
- Heat oven to 180 degrees C.
- Now cut cauliflower.
- Now toss with 2 tbsp olive oil.
- Then sprinkle salt and roast in oven for 45 minutes or till golden.
- Now put oil on garlic pod and roast in this tray.
- When garlic cools, peel it.
- Now melt butter in pan and saute onion until brown.
- Then add brown sugar, roasted cauliflower and garlic.
- Then add stock, cover it and cook for 1 hour.
- Now use hand blender and smooth it.
- Now add milk and mix it nicely.
- Then add nutmeg.
- Put cheese on croutons and melt it in oven for 2 minutes.
- Then serve with hot soup.
