Coconut Egg Curry

Ingredients:

  • Boiled eggs 4
  • Coconut cream powder 1 packet
  • Long chopped onion 1
  • Long tomato slices 1
  • Finely chopped ginger 1 small piece
  • Finely chopped garlic cloves 2
  • Long chopped green chilies 4
  • Turmeric 1/2 tsp
  • Red chili powder 1/2 tbsp
  • Coriander powder 1/2 tbsp
  • Curry leaves few
  • Oil 1/2 cup
  • Salt to taste
  • Coriander leaves for garnish

Method:

  1. Boil eggs nicely.
  2. Put salt while boiling eggs.
  3. Then remove skin of eggs.
  4. Now heat oil in pot, put green chilies, ginger and garlic, fry it slightly and put onion.
  5. Then add turmeric, red chili powder, coriander powder and salt and roast for 2 minutes.
  6. When oil separates, remove pot.
  7. Then fry eggs, cut into 2 pieces each and put in gravy.
  8. Then mix water in coconut cream powder, put in gravy and simmer it for a while.
  9. Then take out in dish, put coriander leaves and serve.

Coconut Egg Curry is wonderful dish. The flavors of coconut cream powder is amazing. Must try this dish for some change.
