Double Corn Bread

Ingredients:

  • Yellow cornmeal 1-1/4 cups
  • Flour 3/4 cups
  • Baking powder 4 tsp
  • Sugar 1 tbsp
  • Salt 1 tsp
  • Black pepper powder 1/4 tsp
  • Eggs 2
  • Milk 1 cup
  • Lemon juice 1/2
  • Oil 1/4 cup
  • Corn 1 cup
  • Grated mozzarella cheese 1/2 cup
  • Mince sausages 1/4 cup
  • Chopped sun-dried tomatoes 2 tbsp
  • Chopped parsley 1 tbsp

Method:

  1. Combine cornmeal, flour, baking powder, sugar, salt and black pepper in bowl.
  2. Then beat eggs in other bowl, mix with lemon juice and make buttermilk.
  3. Then add oil and blend it.
  4. Now add corn, cheese, sausages, sun-dried tomatoes and parsley and mix it.
  5. Then add buttermilk mixture and mix with spatula.
  6. Now heat oil and brush pan.
  7. Then put batter.
  8. Then sprinkle 2 tbsp cheese.
  9. Then bake in oven on 180 degrees C for 25 minutes or golden on top.
  10. Then cut into pieces and serve.

Double Corn Bread is wonderful bread. It is prepared with corn & cornmeal. You can served it in breakfast.
