Double Corn Bread

Ingredients:
- Yellow cornmeal 1-1/4 cups
- Flour 3/4 cups
- Baking powder 4 tsp
- Sugar 1 tbsp
- Salt 1 tsp
- Black pepper powder 1/4 tsp
- Eggs 2
- Milk 1 cup
- Lemon juice 1/2
- Oil 1/4 cup
- Corn 1 cup
- Grated mozzarella cheese 1/2 cup
- Mince sausages 1/4 cup
- Chopped sun-dried tomatoes 2 tbsp
- Chopped parsley 1 tbsp
Method:
- Combine cornmeal, flour, baking powder, sugar, salt and black pepper in bowl.
- Then beat eggs in other bowl, mix with lemon juice and make buttermilk.
- Then add oil and blend it.
- Now add corn, cheese, sausages, sun-dried tomatoes and parsley and mix it.
- Then add buttermilk mixture and mix with spatula.
- Now heat oil and brush pan.
- Then put batter.
- Then sprinkle 2 tbsp cheese.
- Then bake in oven on 180 degrees C for 25 minutes or golden on top.
- Then cut into pieces and serve.
Double Corn Bread is wonderful bread. It is prepared with corn & cornmeal. You can served it in breakfast.
