Chicken Noodle Laska

Ingredients:
- Chicken 1/2 kg
- Coriander 1 tbsp
- Ginger 1 inch
- Lemon grass 2
- Lemon juice & rind 1
- Fish sauce 2 tbsp
- Soya sauce 1 tbsp
- Coconut milk 200 ml
- Garlic slice 3 cloves
- Red chilies slice 3
- Chopped coriander handful
- Green onion slice 2-3'
- Cooked rice noodles 300 gm
- Mint leaves handful
- Sesame oil 1 tbsp
Method:
- Add chicken, coriander, ginger, lemon grass, lemon juice & rind and salt in big saucepan.
- Then add water as required and cook on low flame for 40 minutes or till meat separates from bones.
- Then take out chicken in plate and wrap in foil.
- Then strain stock in clean sauce pan and take it out.
- Then separate chicken from bones, cut into pieces, add in stock and bring to boil.
- Now put fish sauce, soya sauce, coconut milk, garlic, red chilies and chopped coriander and simmer it for 2 minutes.
- Then add green onion and lemon juice.
- Divide cooked rice noodles into 6 bowls and put chicken and vegetables.
- Then put stock and serve.
Chicken Noodle Laska is popular spicy noodle soup in Indonesia, Malaysia and Singapore (Peranakan). It is prepared with rice noodles, chicken & coconut milk. It can be prepared with fish or prawn.
