Shaljum Aur Gajar Ki Sabzi

Ingredients:
- Turnip 1/2 kg
- Carrot 1/2 kg
- Fenugreek 1/2 kg
- Potatoes 2
- Eggplant 2
- Cauliflower 250 gm
- Okra 250 gm
- Green chilies 6
- Coriander leaves 1/2 bunch
- Peas 1 cup
- Garlic 4 cloves
- Tomatoes 1/2 kg
- Red chili powder 2 tsp
- Cumin 2 tsp
- Turmeric 1 tsp
- Mustard 1 tsp
- All spice 1 tsp
- Salt 1 tsp
- Oil 1 cup
Method:
- Boil tomatoes and grind it.
- Now fry turnip, carrot, fenugreek, potatoes, eggplant, cauliflower, peas and okra and take it out.
- Put tomatoes in remaining oil.
- Also add garlic, red chili powder, cumin, turmeric, salt, mustard and all spice and roast it.
- Then put fried vegetables, green chilies and coriander leaves and simmer it for 20 minutes.
- Shaljum aur gajar ki sabzi is ready.
Shaljum Aur Gajar Ki Sabzi is healthy vegetable dish. It is prepared with turnips, carrots, potatoes, cauliflower, potatoes, eggplant & peas. It is served with roti.
