Pumpkin Soup

Ingredients:

  • Olive oil 4 tbsp
  • Finely chopped onion 2
  • Pumpkin (grated, chopped) 1 kg
  • Vegetable or Chicken stock 700 ml
  • Cream 142 ml
  • Whole meal seeded bread 4 slice
  • Pumpkin seeds handful

Method:

  1. Heat oil and cook onion for 5 minutes or till soft.
  2. Now put pumpkin in pan, cook for 8-10 minutes or till golden.
  3. Put stock in pan and add salt and black pepper.
  4. Then cook it for 10 minutes or till pumpkin is soft.
  5. Then add cream in pan, use hand blender and smooth it.
  6. Now cut bread into small croutons.
  7. Then heat 2 tbsp olive oil in frying pan and fry bread until crispy.
  8. Now add pumpkin seeds in pan and cook for few minutes.
  9. Then close in airtight box.
  10. Now heat soup again and serve with croutons.

Pumpkin Soup is wonderful soup. The flavor of pumpkin is amazing. It is popular Thanksgiving dish in the United States.
