Pumpkin Soup

Ingredients:
- Olive oil 4 tbsp
- Finely chopped onion 2
- Pumpkin (grated, chopped) 1 kg
- Vegetable or Chicken stock 700 ml
- Cream 142 ml
- Whole meal seeded bread 4 slice
- Pumpkin seeds handful
Method:
- Heat oil and cook onion for 5 minutes or till soft.
- Now put pumpkin in pan, cook for 8-10 minutes or till golden.
- Put stock in pan and add salt and black pepper.
- Then cook it for 10 minutes or till pumpkin is soft.
- Then add cream in pan, use hand blender and smooth it.
- Now cut bread into small croutons.
- Then heat 2 tbsp olive oil in frying pan and fry bread until crispy.
- Now add pumpkin seeds in pan and cook for few minutes.
- Then close in airtight box.
- Now heat soup again and serve with croutons.
Pumpkin Soup is wonderful soup. The flavor of pumpkin is amazing. It is popular Thanksgiving dish in the United States.
