Rice Meringue Pudding

Ingredients:

  • Rice 1/2 cup
  • Milk 4 cups
  • Sugar 1/2 cup
  • Salt 1 pinch
  • Beaten egg yolks 3
  • Vanilla essence 1 tsp

For Meringue:

  • Egg whites 3
  • Cream of tarter 1/4 tsp
  • Sugar 3 tsp

Method:

  1. Put rice, milk, sugar and salt in saucepan and simmer it for 15 minutes until rice tender.
  2. Now remove from stove, put egg yolks and cook for 2 minutes.
  3. Then add vanilla essence and put in casserole.
  4. For meringue: Beat egg whites and cream of tarter nicely.
  5. Now add sugar and beat it.
  6. Then bake for 5 minutes on 200 degrees C.

Rice Meringue Pudding is wonderful sweet dish. It is prepared with milk & rice, topped with meringue and baked in oven.
