Italian Chicken

Ingredients:
- Chicken breast 2
- Garlic 3 cloves
- Black pepper 1 tsp
- Mustard paste 1 tsp
- Vinegar 1 tsp
- Tomato paste 1/2 cup
- Oregano 1 tsp
- Black olive 1/2 cup
- Mushrooms 1/2 cup
- Capsicum 1
- Mozzarella cheese 1/2 cup
- Beaten egg 1/2 cup
- Flour 1 cup
- Bread crumbs 1 cup
- Baking powder 1/2 tsp
- Salt 1 tsp
- Black pepper 1/2 tsp
- Red chili flakes 1/2 tsp
- Oil for fry
Method:
- Put salt, black pepper, chili flakes, mustard paste and garlic in bowl, mix it nicely, marinate chicken with mixture and keep in fridge for 30 minutes.
- Then mix flour and baking soda and beat eggs.
- Heat oil in frying pan, coat marinated chicken with flour mixture, dip in beaten eggs and roll in bread crumbs.
- Now shallow fry on medium flame until golden brown and keep on baking tray.
- Mix tomato paste, vinegar and salt in bowl and put on chicken.
- Top with cheese, capsicum, olives and mushrooms, sprinkle oregano, bake on 200 degrees C for 15-20 minutes and serve.
Italian Chicken is wonderful dish. Chicken is marinated, coated with flour & bread crumbs, shallow fried and baked with cheese, mushrooms & olives. Try this different dish of chicken.
