Arabian Eggplant Salad

Ingredients:
- Eggplant round 500 gm
- Chopped garlic 2-3 cloves
- Chopped tomato 1
- Onion 1 cup
- Coriander leaves or Parsley 1/2 cup
- Oil for frying
- Salt to taste
For Dressing:
- Crushed black pepper 1 tsp
- Lemon juice 1 tbsp
- Olive oil 1/2 cup
- Salt to taste
Method:
- For dressing: Add all ingredients in mixing bowl and mix it nicely.
- Dressing is ready.
- For salad: Cut eggplant into round slices, put salt and fry in hot oil.
- Then take it out and keep it aside.
- Now add eggplant slice, tomato, onion, garlic and coriander leaves in mixing bowl and mix it nicely.
- Then take out in platter, put dressing and serve.
Arabian Eggplant Salad is healthy salad. It is prepared in Arabic style. It is topped with dressing and serve.
