Chicken Bihari Boti Roll

Ingredients:

  • Boneless chicken cubes 300 gm
  • Ginger garlic paste 1 tsp
  • Oil 1/4 cup
  • Red chili powder 1 tsp
  • Cumin powder 1 tsp
  • Papaya paste 2 tbsp
  • Bihari kabab masala 3 tbsp
  • Meat tenderizer 1 tsp
  • Salt 1/2 tsp
  • Brown onion 2 tbsp
  • Yogurt 1/2 cup

For Tamarind Chutney:

  • Boiled button red chilies 8
  • Tamarind pulp 1/2 cup
  • Coriander leaves 2 tbsp
  • Mint leaves 4 tbsp
  • Salt 1/2 tsp
  • Roasted cumin 1/2 tsp
  • Sugar 1 tsp

For Parathay:

  • Flour 2 cups
  • Semolina 3 tbsp
  • Salt 1/2 tsp
  • Ghee 3 tbsp
  • Water as required
  • Ghee for stuffing
  • Ghee for frying

Method:

  1. For chutney: Put all ingredients in blender and blend it.
  2. Marinate chicken with ginger garlic paste, red chili powder, cumin, papaya paste, bihari kabab masala, meat tenderizer, salt, brown onion and yogurt, fry in pan and give smoke of coal.
  3. For parathay: Mix flour, semolina, salt and 3 tbsp ghee, make dough and leave for 1 hour.
  4. Now make small balls, leave for 10 minutes, roll dough and spread ghee.
  5. Now roll it again and leave for 10 minutes more.
  6. Then make parathay of balls and deep fry it.

Chicken Bihari Boti Roll is tasty side dish. It is common street food in Pakistan. You can make it at home easily.
