Baigan Ka Raita

Ingredients:
- Boiled eggplants 2
- Green chilies 4
- Yogurt 1/2 cup
- Fresh milk 1 cup
- Finely chopped mint leaves 1/2 bunch
- Red chili 1 tsp
- Sugar 1 tbsp
- Salt to taste
For Bhagar:
- Oil 1/2 cup
- Fenugreek seeds 4
- Whole red chilies 6
- Curry leaves few
- White cumin 1 tsp
Method:
- Mix milk, yogurt, green chilies, mint leaves, red chili, sugar and salt nicely in bowl.
- Now make bharta of eggplants with fork and add in bowl.
- Then make bhagar with bhagar ingredients, put bhagar on eggplants and serve.
Baigan Ka Raita is amazing dish. It is prepared in winter season. It is served with hara lehsan in Pakistan.
