Rainbow Vegetables

Ingredients:

  • Tomato slice 1
  • Onion slice 1
  • Green capsicum slice 1
  • Small eggplant slice 1
  • Medium zucchini 1
  • Crushed garlic 1 clove
  • Olive oil 1/4 cup
  • Balsamic vinegar 1/4 cup
  • Sea salt 1/4 tsp
  • Thyme 1/4 tsp

Method:

  1. Keep tomato, onion, capsicum, eggplant and zucchini in pyrex dish.
  2. Then put olive oil, vinegar, salt, thyme and garlic in small bowl, whisk it nicely and blend it.
  3. Now put mixture on vegetables, bake in oven on 180 degrees C for 20-30 minutes and serve.
