Irish Stew

Ingredients:

  • Beef or mutton (chops and a slice of mutton containing a rib) 1 pound
  • Potatoes, carrots, peas, onions, turnips, tomatoes (4 oz) 1-1/2 pound
  • Mint leaves few
  • Ginger 1 inch
  • Cloves 4
  • Cardamoms 4
  • Cinnamon 2
  • Black pepper 1/4 tsp

Method:

  1. Cut meat into small pieces, put up to stew and boil slowly with a little water, mint leaves, ginger, cardamom, cinnamon, cloves and black pepper.
  2. Keep onions whole.
  3. Cut potatoes into two, carrots in round and tomatoes into small pieces.
  4. When meat is half cooked, add vegetables.
  5. When meat and vegetables are ready, add salt to taste.
  6. Mix 4 oz of milk with 1 tbsp of fine flour.
  7. When meat is ready, remove from flame.
  8. Add the milk mixture and add 1 oz of butter.
  9. Put back onto the fire and simmer for five minutes.
  10. When serving, sprinkle little black pepper on top if wanted.
