Chatkhara Biryani

Ingredients:

  • Sela rice 1/2 kg
  • Chicken 500 gm
  • Yogurt 1 cup
  • Fried onions 2
  • Ginger 1 inch
  • Chopped garlic 2 tbsp
  • Potatoes 2-3
  • Red chili powder 2 tbsp
  • Coriander powder 1 tsp
  • Turmeric powder 1 tsp
  • Nutmeg and mace powder 1/2 tsp
  • Bay leaves 2-3
  • Cumin seeds 1 tsp
  • Coriander leaves 1/2 bunch
  • Green chilies few
  • Whole all spice as required
  • Tamarind paste 1/2 cup
  • Chaat masala 1 tsp
  • Lemon juice 1 tsp
  • Mint leaves 1/2 cup
  • Yellow food color 1 pinch
  • Oil 3 tbsp
  • Salt to taste

Method:

  1. For rice: Clean rice and wash it nicely.
  2. Then soak in water for 1-2 hours.
  3. Now put bay leaves, cumin and salt in water and boil it.
  4. Water boils, put, boil it, take it out, strain it and keep it aside.
  5. For korma: Boil potatoes hard with yellow color, water and salt.
  6. Add ginger garlic, coriander leaves and green chilies and blend with water as required.
  7. Heat oil in pan and crackle bay leaves, cumin and whole all spice.
  8. Then add onion, fry it, put hara masala and roast it.
  9. Now add chicken and roast it.
  10. Then add masalay in yogurt and roast it nicely.
  11. When masala roasted and tender, add tamarind paste and mix it.
  12. Then add lemon juice, mix it and remove it.
  13. Korma is ready.
  14. For making layer: Put some korma in pot.
  15. Then put rice.
  16. Then put korma, fried onion, coriander leaves and green chilies.
  17. Then put rice, yellow color and potatoes and simmer it.
  18. When simmer is completed, take out in dish, sprinkle chaat masala and serve.

Chatkhara Biryani is spicy and tasty biryani. It is prepared with chicken & hara masala and sprinkled chaat masala on top..
