Ingredients:

  • Eggplant 2
  • Tahini sauce 1/3 cup
  • Yogurt 250 gm
  • Lemon juice 2 tbsp
  • Pomegranate seeds 2 tbsp
  • Olive oil 2 tbsp
  • Walnuts for garnish
  • Salt to taste

Method:

  1. Bake eggplant in oven for 20-30 minutes, take out from oven and remove its skin.
  2. Then keep on cooking board, cut it, put in bowl, add yogurt, tahini sauce, salt, black pepper and lemon juice, keep in fridge for 5-10 minutes and serve.

Moutabel is amazing dip. It is Lebanese dip. It is prepared with eggplant.
