Spicy Roast Chicken

Ingredients:
- Whole chicken 1
- Onion diced 1
- Carrot diced 1
- Spring onions 2
- Garlic 1
- Butter 3-4 tbsp
- Red chili powder 1 tbsp
- Cumin powder 1 tbsp
- Turmeric powder 1/2 tbsp
- All spice 1 tbsp
- Ginger chili paste 2 tsp
- Dried fenugreek seeds as required
- Salt and black pepper to taste
- Brown sugar 1/2 tsp
Method:
- Add red chili powder, cumin powder, turmeric powder, all spice, ginger chili paste, fenugreek seeds, salt, black pepper and brown sugar in bowl and mix it nicely.
- Put chicken in mixture and put some butter on it.
- Marinate chicken with mixture nicely.
- After marinating for 1 hour or preferably overnight, put onion, carrot and spring onion in roasting tray or baking dish.
- Put chicken over vegetable bread.
- Roast chicken for 45 minutes at 180 degrees C or till done.
Spicy Roast Chicken is delicious dish. Whole chicken is marinated and roasted in oven with vegetables. Serve with paratha or naan and chutney.
