Mexican Chicken

Ingredients:

  • Drumsticks 8
  • Red chili powder 1 tsp
  • Oregano 1 tsp
  • Garlic chopped 2 tsp
  • Coriander powder 1 tsp
  • Olive oil 2 tbsp
  • Finely chopped onion 1
  • Capsicum 2
  • Tomato paste 2 tbsp
  • Tomato puree 2 cups
  • Stock 1 cup
  • Salt 1 tsp
  • Lemon juice 2 tbsp
  • Coriander leaves 2 tbsp
  • Oil 4 tbsp

Method:

  1. Marinate drumsticks with red chili powder, oregano, garlic chopped, coriander powder, olive oil and lemon juice for 30 minutes.
  2. Now heat oil in pan and fry onion until brown.
  3. Now put drumsticks, tomato puree and tomato paste and cover it.
  4. When drumsticks tender and dries, put stock and capsicum.
  5. When 1-2 boils comes, close stove, garnish with coriander leaves and serve.

Mexican Chicken is spicy and delicious dish. It is prepared with drumsticks and cooked with tomato puree. Served with rice. You can prepared it with boneless.
