Mexican Rice

Ingredients:

  • Soaked rice 1/2 kg
  • Olive oil 2 tbsp
  • Garlic 2 tsp
  • Onion 1
  • Boiled corn 1 cup
  • Finely chopped carrot 1 cup
  • Pea 1 cup
  • Finely chopped tomatoes 6
  • Crushed red chili 2 tsp
  • Cumin 1 tsp
  • Salt 1 tsp
  • Stock 2 cups
  • Capsicum 2

Method:

  1. Heat oil in pan and fry onion until brown.
  2. Now put tomatoes, red chili, cumin, salt and garlic and cover for 10 minutes.
  3. Then add peas, carrot, stock, capsicum, corn and rice.
  4. When 2-3 boils comes, simmer it and close stove.

Mexican Rice is tasty dish. It is prepared with rice, vegetable and corn. Serve with Mexican chicken.
