Mexican Rice

Ingredients:
- Soaked rice 1/2 kg
- Olive oil 2 tbsp
- Garlic 2 tsp
- Onion 1
- Boiled corn 1 cup
- Finely chopped carrot 1 cup
- Pea 1 cup
- Finely chopped tomatoes 6
- Crushed red chili 2 tsp
- Cumin 1 tsp
- Salt 1 tsp
- Stock 2 cups
- Capsicum 2
Method:
- Heat oil in pan and fry onion until brown.
- Now put tomatoes, red chili, cumin, salt and garlic and cover for 10 minutes.
- Then add peas, carrot, stock, capsicum, corn and rice.
- When 2-3 boils comes, simmer it and close stove.
Mexican Rice is tasty dish. It is prepared with rice, vegetable and corn. Serve with Mexican chicken.
