Mini Cheesecake

Ingredients:

  • Cream cheese 8 oz
  • Sugar 1/2 cup
  • Eggs 2
  • Vanilla essence 2 tsp
  • Whole cookies 6
  • Hot fudge or Chocolate syrup as required
  • Whipped cream as required
  • Cookie crumbs for garnish

Method:

  1. Place cupcake liners in muffin tins.
  2. Set whole cookie in bottom on each liner.
  3. Beat together cream cheese, sugar and vanilla until smooth.
  4. Add eggs, one at a time, mixing until just blended.
  5. Gently fold in crushed cookies.
  6. Spoon cheesecake mixture over each cookie in liners.
  7. Bake at 180 degrees C for 15-20 minutes or until center of each cheesecake is almonds set.
  8. Cool completely and refrigerate at least one hour or overnight.
  9. Top with dollop of whipped cream , drizzle chocolate sauce and sprinkle crushed cookies on top.

Mini Cheesecake is delightful dessert. Base is prepared with cookies, topped with cream cheese mixture and then baked. Chilled and topped with chocolate sauce & crushed cookies.
