Fried Masala Eggplant

Ingredients:

  • Eggplants 2
  • Oil for fry
  • Onion 1 cup
  • Ginger garlic paste 1 tbsp
  • Tomatoes slice 2
  • Yogurt 1/2 cup
  • Green chilies 2 tbsp
  • Crushed cumin 1/2 tsp
  • Mustard seeds 1/2 tsp
  • Fennel seeds 1/2 tsp
  • Whole coriander 1/2 tsp
  • Crushed red chili 1 tsp
  • Turmeric powder 1 tsp
  • Lemon juice 1 tbsp
  • Salt to taste
  • Oil 1/4 cup

Method:

  1. Cut eggplants into slices, put salt, deep fry it and keep it aside.
  2. Then heat oil in pan, saute onion, put ginger garlic paste and green chilies, fry for few minutes, put tomatoes slices and turmeric and fry more for 2 minutes.
  3. Now grind, fennel seeds, whole coriander, mustard seeds and crushed cumin together, put all masalay on high flame and roast it.
  4. Then add fried eggplants, simmer it for 5 minutes, put lemon juice and served.

Fried Masala Eggplant is tasty dish. Eggplant is deep fried, cooked with spices and simmered. Serve with roti or naan.
