Chicken Reshmi Biryani

Ingredients:

  • Chicken (8 pieces) 1 kg
  • Onion sliced 1 kg
  • Oil for frying
  • Coriander leaves 1 cup
  • Garlic paste 1/2 tsp
  • Ginger paste 1/2 tsp
  • Crushed coriander seeds 1 tbsp
  • Turmeric 1/2 tsp
  • Chili powder 2 tsp
  • All spice 1/2 tsp
  • Yogurt 1 cup
  • Salt 1 tbsp

For Rice:

  • Rice 2 cups
  • Salt 1/2 tsp
  • Water as required

Method:

  1. Heat enough oil in pan and fry onions until brown and crisp.
  2. Strain onions and oil in strainer and keep it aside.
  3. Marinate chicken with ginger paste, garlic paste, coriander seeds, turmeric, chili powder, all spice, yogurt and salt for 3-4 hours at least.
  4. Cook rice in salted water till almost done.
  5. Drain rice and keep it aside.
  6. Heat little more oil, add chicken, saute it and once half done, spread it to form layer.
  7. Over chicken, make layer of half each of rice, onions and coriander leaves.
  8. Repeat same layers second time, cover pan with tight lid and place on tawa and leave on low heat to simmer till chicken is done.
  9. Then mix it and serve.

Chicken Reshmi Biryani is delicious & tasty biryani. Chicken is marinated and fried in oil. Then mixed with rice and served with mint coriander raita.
