Prawns Biryani

Ingredients:

For Masala:

  • Oil 2 tbsp
  • Prawns 1 kg
  • Red chili powder 2 tbsp
  • Coriander powder 1 tsp
  • Turmeric powder 1 tsp
  • Fennel seeds 1 tbsp
  • Biryani masala 1 tbsp
  • All spice powder 1 tbsp
  • Onion sliced 300 gm
  • Coconut milk 1 cup
  • Green chilies 4
  • Ginger garlic paste 2 tbsp
  • Tomatoes sliced 250 gm
  • Black pepper powder 1 tsp
  • Cinnamon sticks 2
  • Cumin seeds 1 tbsp
  • Bay leaf 1
  • Black cardamoms 2
  • Green cardamoms 4
  • Star anise 1
  • Cloves 4-6
  • Peppercorns 4-6
  • Coriander leaves 1/2 cup
  • Potato diced 1
  • Mint leaves few
  • Lemon juice 2 lemons
  • Salt to taste

For White Paste:

  • Melon seeds 2 tbsp
  • White sesame seeds 2 tbsp
  • Poppy seeds 1 tbsp
  • Almonds 6-7
  • Cashew nuts 3-4

For Rice:

  • Rice 3/4 cup
  • Coconut milk 2 cups
  • Onions julienne 2
  • Sugar 1 tbsp
  • Cashew nut 10
  • Raisins 10

Method:

  1. Mix prawns with red chili powder, coriander powder, turmeric powder, lemon juice and salt and marinate for 20 minutes.
  2. Heat oil and saute onion until golden brown.
  3. Add sugar to caramelize onion faster.
  4. In same pan, add cashew nuts and raisins, saute it and set it aside.
  5. Add little more oil in same pan, add bay leaf, star anise, cinnamon and black cardamom.
  6. Saute until leaves nice aroma.
  7. Now add coconut milk and half mace powder.
  8. Add soaked rice and water and cook till half cooked.
  9. Strain if any excess water.
  10. Blend all ingredients of white paste until smooth paste, add little water if required.
  11. Take oil or ghee in other pan.
  12. Add cumin seeds, green cardamom, bay leaf, peppercorn, cinnamon and black cardamom, saute for 1 minute and add onion.
  13. Add some salt, stir for 2-3 minutes until they change color to light brown.
  14. Add tomatoes, green chilies, ginger garlic paste, black pepper powder, coriander leaves, biryani masala and all spice powder and stir it nicely.
  15. Then add potatoes. Put coconut milk and mace powder.
  16. Add white paste. If you like it spicy, then add some more red chili powder this time.
  17. Add prawns, cover it and cook until potatoes are done.
  18. To assemble: Spread some prawn gravy first.
  19. Now spread some boiled rice, some fried onion, ghee, mint leaves, saffron, fried cashew nuts and raisins on boiled rice.
  20. Spread remaining prawn gravy. Then boiled rice.
  21. Again spread some fried onion, ghee, mint leaves, saffron, fried cashew nuts and raisins.
  22. Finish rice on top.
  23. Cover tightly and simmer till done.

Prawn Biryani is delicious and tasty dish. It is prepared with many ingredients and in long method. Make it with your own method.
