Chicken In Creamy Mustard Sauce

Ingredients:
- Chicken drumsticks 1 kg
- Onion slice 1
- Mushroom sliced 1 cup
- Leeks or Spring onions 2
- Garlic finely chopped 3-4 cloves
- Chicken stock 1 cup
- Mustard 3 tbsp
- Cream 1/2 cup
- Lemon juice 1 tbsp
- Black pepper to taste
- Salt to taste
- Paprika 1/2 tsp
- Butter 1 tbsp
- Oil 2 tbsp
Method:
- Marinate chicken with lemon juice, salt and black pepper for at least 30 minutes.
- Heat butter and 1 tbsp oil in pan.
- Sprinkle paprika on chicken and then brown drumsticks nicely.
- Add 1 tbsp oil in same pan and add garlic.
- When garlic just starts to soften, add onion and leeks or spring onion, stir well and cover pan.
- Then idea is to get onion and leeks or spring onion to soften up in steam without getting brown.
- After about 10 minutes or so, remove half onion from pan and keep it aside.
- Add stock to pan and stir in mustard.
- Increase heat and let stock come to quick boil.
- Reduce heat to low, add chicken and cover pan.
- Let chicken cook till done.
- Add back leeks removed earlier and let it cook uncovered for another 10 minutes or so till is chicken is completely cooked and sauce is of nice consistency.
- Gradually add cream, bit at a time.
- Let sauce simmer on lowest heat.
- Taste and adjust seasonings, add more salt and black pepper as necessary.
- Serve with steamed rice or crusty bread.
