Chicken In Creamy Mustard Sauce

Ingredients:

  • Chicken drumsticks 1 kg
  • Onion slice 1
  • Mushroom sliced 1 cup
  • Leeks or Spring onions 2
  • Garlic finely chopped 3-4 cloves
  • Chicken stock 1 cup
  • Mustard 3 tbsp
  • Cream 1/2 cup
  • Lemon juice 1 tbsp
  • Black pepper to taste
  • Salt to taste
  • Paprika 1/2 tsp
  • Butter 1 tbsp
  • Oil 2 tbsp

Method:

  1. Marinate chicken with lemon juice, salt and black pepper for at least 30 minutes.
  2. Heat butter and 1 tbsp oil in pan.
  3. Sprinkle paprika on chicken and then brown drumsticks nicely.
  4. Add 1 tbsp oil in same pan and add garlic.
  5. When garlic just starts to soften, add onion and leeks or spring onion, stir well and cover pan.
  6. Then idea is to get onion and leeks or spring onion to soften up in steam without getting brown.
  7. After about 10 minutes or so, remove half onion from pan and keep it aside.
  8. Add stock to pan and stir in mustard.
  9. Increase heat and let stock come to quick boil.
  10. Reduce heat to low, add chicken and cover pan.
  11. Let chicken cook till done.
  12. Add back leeks removed earlier and let it cook uncovered for another 10 minutes or so till is chicken is completely cooked and sauce is of nice consistency.
  13. Gradually add cream, bit at a time.
  14. Let sauce simmer on lowest heat.
  15. Taste and adjust seasonings, add more salt and black pepper as necessary.
  16. Serve with steamed rice or crusty bread.
