Tikka Wraps

Ingredients:

For Marinate:

  • Yogurt 150 ml
  • Oil 1 tbsp
  • Ginger chopped 1 inch
  • Garlic 1
  • Red chili powder 1/2 tsp
  • All spice 1 tsp
  • Green cardamom, black cardamom, fennel powder 1 pinch
  • Salt 1 tsp
  • Cheddar cheese grated 2 tbsp
  • Lemon juice 1 tbsp
  • Egg 1
  • Gram flour 2 tbsp

For Chicken:

  • Chicken breast cubed 1/2 kg
  • Oil for brush
  • Melted butter 2 tbsp

To Serve:

  • Chaat masala 3/4 tsp
  • Flour tortillas 5
  • Onion finely sliced 1
  • Tomatoes finely sliced 2
  • Lettuce finely sliced 2

Method:

  1. For chicken: Add all marinate ingredients in big bowl and mix it nicely.
  2. Pierce chicken pieces all over with fork and add to marinate.
  3. Leave to marinate in fridge for few hours, if possible, bring chicken back to room temperature before cooking.
  4. To cook chicken: Preheat grill.
  5. Thread chicken pieces onto skewers spacing them apart so they do not touch.
  6. Grill for 6-8 minutes, turning halfway through cooking time.
  7. Then baste chicken with butter and grill for another minute or until slightly charred at edges and completely cooked.
  8. Using fork, slide chicken pieces off the skewers and sprinkle chaat masala.
  9. Wrap tortillas in foil and place in oven for last 5 minutes of cooking.
  10. Divide chicken into equal portions and place each portion in middle of warmed tortillas.
  11. Topped with sliced vegetables and spoonful of chutney.
  12. Fold over top of tortilla and pull in sides.
  13. Cut in half on diagonal and serve.

Tikka Wraps is a type of sandwich. Chicken is marinated and grilled with butter & oil on grill pan. Then stuffed with vegetables & sauce in tortillas and served.
