Yogurt Pineapple Bars

Ingredients:
For Crust:
- Biscuits crumbs 3/4 cup
- Unsalted butter melted 2 tbsp
For Filling:
- Cream cheese 6 oz
- Yogurt 3/4 cup
- Eggs 2
- Egg yolk 1
- Caster sugar 1/4 cup
- Pineapple juice 1/3 cup
- Vanilla essence 1 tsp
- Cherries and pineapple sliced for decoration
Method:
- Line bottom and side of 8 or 0 inch square baking pan with aluminum foil or parchment, leaving an overhang of all sides to easily lift bars out of pan before cutting.
- For crust: Mix all ingredients until combined.
- Evenly press crust into prepared baking pan.
- Bake at 180 degrees C for 8 minutes.
- Remove from oven and set aside.
- For filling: Beat cream cheese until completely smooth, beat in yogurt.
- Then add eggs and egg yolk.
- Next beat in sugar, pineapple juice and vanilla essence until everything is combined and no lumps remain.
- Pour filling onto crust.
- Bake for 25-30 minutes or until center of bars no longer jiggles.
- Allow bars to cool at room temperature set on wire rack for 30 minutes.
- Then chill in refrigerator for 3-4 hours or overnight.
- Once chilled, lift foil out of pan using overhang on sides and cut into squares.
- For neat squares, use very sharp knife and wipe it clean with paper towel after each cut.
Yogurt Pineapple Bars is new dessert. Crust is prepared with biscuits & butter and baked. Then topped with cream cheese filling and again baked. Chilled and decorated with pineapple & cherries.
