Yogurt Pineapple Bars

Ingredients:

For Crust:

  • Biscuits crumbs 3/4 cup
  • Unsalted butter melted 2 tbsp

For Filling:

  • Cream cheese 6 oz
  • Yogurt 3/4 cup
  • Eggs 2
  • Egg yolk 1
  • Caster sugar 1/4 cup
  • Pineapple juice 1/3 cup
  • Vanilla essence 1 tsp
  • Cherries and pineapple sliced for decoration

Method:

  1. Line bottom and side of 8 or 0 inch square baking pan with aluminum foil or parchment, leaving an overhang of all sides to easily lift bars out of pan before cutting.
  2. For crust: Mix all ingredients until combined.
  3. Evenly press crust into prepared baking pan.
  4. Bake at 180 degrees C for 8 minutes.
  5. Remove from oven and set aside.
  6. For filling: Beat cream cheese until completely smooth, beat in yogurt.
  7. Then add eggs and egg yolk.
  8. Next beat in sugar, pineapple juice and vanilla essence until everything is combined and no lumps remain.
  9. Pour filling onto crust.
  10. Bake for 25-30 minutes or until center of bars no longer jiggles.
  11. Allow bars to cool at room temperature set on wire rack for 30 minutes.
  12. Then chill in refrigerator for 3-4 hours or overnight.
  13. Once chilled, lift foil out of pan using overhang on sides and cut into squares.
  14. For neat squares, use very sharp knife and wipe it clean with paper towel after each cut.

Yogurt Pineapple Bars is new dessert. Crust is prepared with biscuits & butter and baked. Then topped with cream cheese filling and again baked. Chilled and decorated with pineapple & cherries.
