Cream Of Spinach Soup Recipe

Ingredients:
- Spinach 1 cup
- Butter 1 tsp
- Flour 2 tbsp
- Milk 2 cups
- Salt 1/2 tsp
- Black pepper 1/2 tsp
- Oil 2-3 tbsp
- Spinach leaves 6-7
Method:
- Heat butter in pan.
- Add flour and saute for 1 minute.
- Then add milk and cool till mixture is thick, whisking continuously.
- Add spinach puree, salt, black pepper, stir well and simmer for 2-3 minutes.
- Heat oil and add spinach leaves.
- Fry till spinach is crisp and drain on absorbent paper.
- Pour soup into serving bowl, garnish with with spinach and serve.
