Ingredients:
- 1 lb or (450 gm) mutton or lamb
- 1 tsp fresh ginger, grated
- 3 cloves garlic
- Salt and pepper
- ½ teaspoon turmeric powder
- 4 pods cardamom
- 2 cinnamon sticks, 4 cloves
- 12 oz (350 gms) onions, sliced thick
- 12 oz (350 gms) tomatoes, sliced thick
- 12 oz (350 gms) coriander, chopped
- 2 tablespoons mint, chopped
- 3 oz (75g) Oil
Method:
- Remove any fat from the meat and mix the meat in a bowl with ginger, garlic, salt, pepper, turmeric, cardamom, cinnamon and cloves.
- Marinate for 1 hour.
- Spread the mutton in a wide flameproof, ovenproof dish and top with the sliced onions, then the sliced tomatoes and then the potatoes. Sprinkle with coriander and mint.
- Heat oil and pour it over the top.
- Cover and cook on a stove for 10 minutes. Then bake in an oven for 1 to 1 ½ hours in a low oven 170 C/325 F or gas 3 or bake until the meat is tender and the vegetables are cooked.
- Serve hot
