Vegetable Soup

Ingredients:

  • Vegetable oil – 2 tbsp
  • Onion - 1 (peeled and chopped)
  • Leeks – 2 (chopped)
  • Vegetable stock – 1 liter
  • Baking potato – 1 (cut into cubes)
  • Peas – few

Method:

  1. Heat oil in a pan and fry the onion and leeks until soft.
  2. Add the stock and potato and bring to a boil.
  3. Simmer for 20 minutes.
  4. Add peas in the pan and bring back to a boil, then simmer for 5 more minutes.
  5. Cool slightly and blend with a food processor.
  6. Garnish with lemon juice and serve hot.

Healthy and delicious.
