Vegetable Soup

Ingredients:
- Vegetable oil – 2 tbsp
- Onion - 1 (peeled and chopped)
- Leeks – 2 (chopped)
- Vegetable stock – 1 liter
- Baking potato – 1 (cut into cubes)
- Peas – few
Method:
- Heat oil in a pan and fry the onion and leeks until soft.
- Add the stock and potato and bring to a boil.
- Simmer for 20 minutes.
- Add peas in the pan and bring back to a boil, then simmer for 5 more minutes.
- Cool slightly and blend with a food processor.
- Garnish with lemon juice and serve hot.
