Chinese Hot And Spicy Chicken

Ingredients:

  • 4 tablespoon oil
  • 1 green onion
  • 2 hot peppers
  • 1 tablespoon ginger, shredded
  • 2 tablespoon light soy sauce
  • 2 pound chicken
  • 1/2 cup chicken broth
  • 1 tablespoon light soy sauce
  • 2 tablespoon vinegar
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1 teaspoon anise pepper
  • 1 tablespoon cornstarch

Method:

  1. Cut chicken into bite-sized pieces; marinate 15-20 minutes in ginger, soy sauce mixture.
  2. Cut green onion and hot peppers diagonally into 1-inch pieces. Grind anise pepper to powder.
  3. Mix chicken broth, soy sauce, vinegar, sugar, salt and pepper.
  4. Heat oil. Add onion, and stir fry several times. Add ginger, soy mixture and chicken to onions and hot pepper, and stir-fry for 1-2 minutes more.
  5. Add chicken broth mixture, mix well. Cook over low heat until chicken pieces are tender.
  6. Add cornstarch to thicken. Serve.
