Lemon Pie Bars

Ingredients:

  • 3/4 cup margarine
  • 1/2 cup powdered sugar
  • 1 1/2 cups plus 3 tablespoons flour, divided
  • 1 1/2 cups sugar
  • 3 eggs beaten lightly
  • juice of two lemons

Method: 

  1. Cut softened margarine into powdered sugar. Add 1 1/2 cups flour and mix. Pat into bottom of a 9 by 12 inch pan. Bake for 20 minutes at 350F.
  2. In a bowl, lightly beat eggs. Then add sugar, remaining flour, lemon juice and mix together and pour remaining ingredients over hot crust. Return to oven and bake 20 minutes more.
  3. Cut and sprinkle with powdered sugar as soon as it comes from oven.

Scrumptious and easy to prepare. A great non-chocolate dessert
