Lemon Pie Bars

Ingredients:
- 3/4 cup margarine
- 1/2 cup powdered sugar
- 1 1/2 cups plus 3 tablespoons flour, divided
- 1 1/2 cups sugar
- 3 eggs beaten lightly
- juice of two lemons
Method:
- Cut softened margarine into powdered sugar. Add 1 1/2 cups flour and mix. Pat into bottom of a 9 by 12 inch pan. Bake for 20 minutes at 350F.
- In a bowl, lightly beat eggs. Then add sugar, remaining flour, lemon juice and mix together and pour remaining ingredients over hot crust. Return to oven and bake 20 minutes more.
- Cut and sprinkle with powdered sugar as soon as it comes from oven.
Scrumptious and easy to prepare. A great non-chocolate dessert
