Cabbage potato soup

Ingredients:

  • 1/2 cup chopped onion
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 4 cups shredded cabbage
  • 1/2 cup chopped carrot
  • 3 cups vegetable broth
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 3 cups diced potato
  • 1 can evaporated milk
  • 1 tablespoon parsley
  • ½ tablespoon paprika

Method:

  1. In a large pan heat butter over medium-low heat; cook onion until golden in color.
  2. Stir in flour until well blended. Add cabbage and carrots along with the broth, salt, pepper, and potatoes.
  3. Bring to a boil, stirring frequently.
  4. Cover and cook until tender.
  5. Add milk and heat through.
  6. Sprinkle a little parsley and paprika.
