Mango Banana Delight

Ingredients:
- 1 Ripe Mango
- 1 Ripe Banana
- 1 tsp. Lemon Juice
- 1 tsp. Sugar
- 1/2 Cup Raspberries
- 2 Cups cottage cheese
- 1 tsp. Apricot Jelly
Method:
- In a bowl, stir lemon juice and 1tsp. sugar. Slice Mango and Banana. Put in bowl with lemon juice and delicately stir, so that fruits are evenly covered.
- In a finely-meshed strainer, press raspberries with the back of a spoon. Keep pressing and rubbing until all the juice has been extracted but not the seeds
- In a small pot, on a low flame, melt apricot jelly with raspberry juice. Stir.
- Distribute cottage cheese, into individual bowls.
- Then cover with fruits, and then with raspberry sauce.
- Refrigerate for a few hours
- Serve cold.
