Curried Peanut Chicken Nibbles

Ingredients:
- 125g packet salted peanuts
- 1 tsp curry powder
- 1/2 cup toasted breadcrumbs
- 2 eggs
- 2 Tbsp corn flour
- 18 chicken pieces cut into bite size pieces
- 3 Tbsp oil
Method:
- Chop peanuts finely in a processor. Mix nuts, curry powder and breadcrumbs together.
- In a separate bowl, lightly beat eggs and corn flour together and then add the nuts and breadcrumbs mixture to it.
- Dip chicken nibbles in egg mixture then the crumb mixture.
- Heat oil in a roasting dish. Place the nibbles in the dish and turn to coat in oil.
- Bake at 180 C for 20 minutes or until cooked.
- Serve warm or cold
