Curried Peanut Chicken Nibbles

Ingredients:

  • 125g packet salted peanuts
  • 1 tsp curry powder
  • 1/2 cup toasted breadcrumbs
  • 2 eggs
  • 2 Tbsp corn flour
  • 18 chicken pieces cut into bite size pieces
  • 3 Tbsp oil

Method:

  1. Chop peanuts finely in a processor.  Mix nuts, curry powder and breadcrumbs together.  
  2. In a separate bowl, lightly beat eggs and corn flour together and then add the nuts and breadcrumbs mixture to it.
  3. Dip chicken nibbles in egg mixture then the crumb mixture.  
  4. Heat oil in a roasting dish.  Place the nibbles in the dish and turn to coat in oil.  
  5. Bake at 180 C for 20 minutes or until cooked.  
  6. Serve warm or cold
