Thai Chili Cake With Ginger Dip

Ingredients 

½ kg chicken mince
1 egg
2 sliced spring onions
½ cup plain flour
1 tsp sliced ginger
1 tsp sliced garlic
1 tbsp Thai chili paste
1 tbsp chili sauce
4 tbsp coriander 
oil as required

ingredients for ginger dip

½ cup sugar
1 tsp sliced garlic
1 tsp red chili flakes
1 tbsp sliced ginger
1 tbsp soya sauce
½ tsp black pepper
½ tsp salt
2 tbsp honey 
2 tbsp oil
4 tbsp vinegar


Method 

  1. In a cooking pot, mix together ½ kg chicken mince, 1 tsp sliced garlic, 1 tsp sliced ginger, 4 tbsp chopped coriander, 1 tbsp thai chili paste, 1 tbsp chili sauce, a beaten egg, 2 chopped spring onion and ½ cup plain flour.
  2. Spread this mixture on a tray and cut2 inches round pieces from it. 
  3. Shallow fry in oil as required and keep aside.
  4. For ginger dip, heat 2 tbsp oil in a pan. 
  5. Add 1 tbsp sliced garlic ginger, 1 tbsp soya sauce, 4 tbsp vinegar, ½ tsp black pepper, ½ tsp salt, 2 tbsp honey, ½ cup sugar and 1 tsp red chili flakes. 
  6. Cook until the mixture is thick.
  7. Take off the flame and serve ginger dip with thai chili cakes.
