Pickles

Ingredients 

  • ½ kg raw mangoes
  • 6 curry leaves
  • ½ cup oil
  • 1 tsp funnel seeds
  • 1 tsp turmeric powder
  • 1 tbsp crushed garlic 
  • ½ tsp onion seeds
  • ½ tsp salt
  • 2 tsp mustard seeds
  • 2 tsp red chili powder

Method

  1. Boil half cup water and add 2 tsp mustard seeds, ½ tsp onion seeds, 2 tsp red chili powder, 1 tsp fennel seeds, 1 tsp turmeric powder, ½ tsp salt, 6 curry leaves and 1 tbsp crushed garlic.
  2. Then add ½ kg chopped raw mangoes to it and cook on low flame. 
  3. When raw mango is tender, increase the flame to let excess water evaporate. Now add ½ cup oil and mix. Pickles are ready.

Lentils

Ingredients 

  • 125 grams moong ki daal
  • 125 grams masoor ki daal
  • 1 small onion
  • 6 green chilies 
  • 1 cup tamarind juice 
  • ½ bunch fresh coriander
  • 1 sachet Maggie enhancer
  • 1 tsp salt
  • 1 tsp hot spices powder
  • 1 tbsp garlic paste
  • 2 tsp red chili flakes
  • ½ turmeric powder
  • For Tarka
  • 8 whole red chilies
  • 8 curry leaves
  • ½ cup oil
  • 2 tsp cumin seeds

Method

  1. Wash 125 grams moong daal and 125 grams masoor daal thoroughly.
  2. In a cooking pot, add washed lentils, 4 glasses of water, 1 tsp salt, ½ tsp turmeric powder, 2 tsp red chili flakes, 1 small onion and 1 tbsp garlic paste and allow cooking on medium flame.
  3. When lentils are tender, mash them and add 1 cup tamarind juice, 6 green chilies, ½ bunch fresh coriander, 1 sachet magi enhancer and 1 tsp hot spices powder, stir well, turn off the flame.
  4. In a pan, heat ½ cup oil and sauté 8 red chilies, 8 curry leaves and 2 tsp cumin seeds in it. Apply its tarka on daal and serve.

Kachomar

Ingredients 

  • 2 onions
  • 2 tomatoes
  • 2 green chilies
  • 1 cup mint leaves
  • ½ tsp black pepper
  • ½ tsp salt
  • 2 tbsp lemon juice

Method

  1. Chop finely 2 onions, 2 tomatoes, 2 green chilies and 1 cup mint.
  2. Sprinkle ½ tsp black pepper, ½ tsp salt and 2 tbsp lemon juice on top of it.
  3. Kachomar is ready to be serve with you meal.


Stuffed Chilies


Ingredients 

  • 10 german chilies
  • 1 cup mince meat
  • ½ cup tamarind juice
  • ½ cup oil
  • 1 tsp crushed garlic
  • 1 tsp mustard seeds
  • 1 tsp fennel seeds
  • 1 tbsp chaat masala
  • 2 tsp red chili flakes
  • ½ turmeric powder
  • ½ tsp salt

Method

  1. In a bowl, add 1 cup boiled mince meat, ½ cup tamarind juice, 2 tsp red chili flakes, ½ tsp turmeric powder, 1 tsp crushed garlic, 1 tsp mustard seeds, 1 tsp fennel seeds, 1 tbsp chaat masala and ½ salt. Mix together all ingredients.
  2. Slit 10 german chilies and fill the mixture in it.
  3. In a pan, heat ½ cup oil and cook stuffed chilies in it for 5 minutes on low flame.
  4. Then change sides and cook for another 5 minutes.
  5. Take out in a platter and serve hot stuffed chilies.


Lehsan ka Raita

Ingredients 

  • 250 grams yogurt
  • 4 cloves of garlic
  • ½ cup water
  • 1 tsp sautéed cumin
  • 1 tbsp green chili paste
  • ½ tsp salt 
  • ½ tsp black pepper
  • 3 tbsp oil

Method

  1. Add ½ cup water, ½ tsp salt, 1 tsp sautéed cumin, ½ tsp black pepper and 1 tbsp green chili paste to 250 grams yogurt, beat well.
  2. Sauté 4 chopped cloves of garlic in 3 tbsp oil.
  3. When garlic is fragrant, apply its tarka on raita and serve.


Tarka Chawal

Ingredients 

  • ½ kg rice
  • 1 onion
  • 1 tsp cumin seeds
  • 1 tsp ginger garlic paste
  • 1 tsp turmeric powder
  • 1 tsp salt
  • 4 tbsp oil

Method

  1. Soak ½ kg rice for half an hour. In a pan, heat 4 tbsp oil and sauté a chopped onion in it.
  2. Then add 1 tsp cumin seeds,  1 tsp ginger garlic paste
  3. And 1 tsp turmeric powder and stir well.
  4. Now add soaked rice, 1 ½ glass water and 1 tsp salt and allow cooking on medium flame.
  5. When water has evaporated, allow simmering for 15 minutes delicious tarka chawal is ready.
