Asians Bhaji

Ingredients

  • 2 Medium eggplants
  • 2 Medium potatoes
  • 2 Tomatoes
  • 1 boiled carrot
  • 1 medium onion
  • 4 to 5 green chilies
  • 125 grams yogurt
  • ½ cup peas
  • ½ cup fresh cream
  • 4 to 5 cloves of garlic
  • ¼ cup oil
  • ½ cu water
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 tbsp cumin seeds
  • salt to taste

Method

  1. Firstly heat ¼ cup oil in a cooking pan.
  2. Add 1 slices onion, 1 medium piece of ginger and 4 to 5 cloves of garlic cook till golden.
  3. Add 2 medium eggplants, 2 medium potatoes, 2 tomatoes, 4-5 big whole green chilies, ½  cup peas and 1 boiled carrot fry on high flame 4 to 5 minutes.
  4. Then add 1 tsp red chili powder, 1 tsp turmeric powder, 1 tbsp cumin seeds, salt to taste, 125 grams yogurt and ½ cup water.
  5. Now cover with lid and let it simmer for 10 to 12 minutes.
  6. Then turn the flame high and let water dries.
  7. Ready to serve.
