Keri kay chilkon ka Achar
Ingredients
Raw mango peel 1 cup
Green chilies 6
Garlic 8 cloves
White cumin seeds 1 tsp
Mustard seeds 1 tsp
Turmeric powder 1 tsp
Red pepper 1 tbsp
Onion seeds ½ tsp
Salt to taste
Whole red chilies 4
Fenugreek seeds few
Curry leaves few
Mustard oil 250 ml
Method
Wash 1 cup raw mango peel very well.
Add in 6 green chilies, 8 cloves of garlic, 1 tsp cumin seeds, 1 tsp crushed red pepper, ½ tsp onion seeds and salt to taste.
Mix very well and keep aside for 30 minutes.
Heat 250 ml oil in wok, add in a piece of chapatti and cook till its color into black. Now remove piece of chapatti.
Add in few fenugreek seeds, few curry leaves and 4 whole red chilies.
New remove wok from fire.
Cool oil for 5 minutes. Add in raw mango peel mixed with masala.
Mix well with a wooden spoon.
Slightly fry over low flame for few minutes. Cook till oil comes on top.
Save in a glass jar.
Use as required.
Keri Ka Qeema
Ingredients
Mice ½ kg
Raw mango 3
Onion chopped 3
Green chilies 4
Coriander leaves 1 bunch
Mint leaves 1 bunch
Curry leaves few
Oil ½ cup
Turmeric 1 tsp
Ginger chopped 1 tsp
Ginger garlic paste 1 tbsp
Onion seeds ½ tsp
Chili powder ½ tbsp
Salt to taste
Method
In a pan put together ½ kg mince, salt to taste, 1 tbsp ginger garlic paste, 1 tsp turmeric and ½ tbsp chili powder.
Cook over low flame without adding water.
Cook till water dries.
Add in ½ cup oil, 3 mango cut into pieces, 3 chopped onion, few curry leaves and ½ leaves and ½ tsp onion seeds. Slightly fry
Cook till mince is tender.
Now add 1 tsp chopped ginger, 4 chopped green chilies, 1 bunch of chopped coriander leaves and 1 bunch of chopped mint leaves, simmer for 5 minutes.
Ready to serve.
