Egg and Cabbage Bhujia

Ingredients 

  • Cabbage 2 cups
  • Eggs beaten 2
  • Green chilies chopped 4 
  • Onion finely chopped 1 cup
  • Boiled peas ½ cup
  • Oil ¼ cup
  • Salt 1 tsp
  • White cumin whole 1 tsp
  • Garlic paste 1 tsp
  • Turmeric ½ tsp

Method

  1. Heat ¼ cup oil pan. 
  2. Add 1 tsp white cumin and 1cup chopped onion. 
  3. Fry till light golden.
  4. Add 1 tsp garlic paste with 2 beaten eggs, mix well.
  5. Add ½ tsp turmeric, 1 tsp salt, 4 chopped green chilies and 2 cups sliced cabbage. 
  6. Cover and cook for 15 minutes on low flame, lastly add ½ cup boiled peas and remove.

Ghatiye ki Bhujiya 

Ingredients

  • Ghatia 250 gm
  • Onion sliced
  • Tomatoes chopped 2
  • Green Chilies Chopped 2
  • Oil ½ cup
  • Garlic paste 1 tsp
  • Roasted and crushed cumin 1 tsp
  • Chili powder 1 tsp
  • Salt ¼ tsp
  • Turmeric ½ 

Method

  1. Heat ½ cup oil, fry 1 cup sliced onion till light brown. 
  2. Add 1 tsp garlic paste, 1 tsp roasted and crushed cumin, ½ tsp turmeric, 1 tsp chili powder, ¼ tsp salt with ¼ tsp salt with ¼ cup water, add250 gm ghatias and mix well.
  3. Add ½ cup water to softened ghatias. 
  4. When little water left add cubes of tomatoes, 2 green chilies. 
  5. Simmer for 10 minutes.

Cholay Ki Saag

Ingredients

  • Amaranth leaves ½ 
  • Tomato chopped 1
  • Potatoes 2 
  • Green chilies 4 
  • Onion 1 cup
  • Oil ¼ cup
  • White cumin seeds 1 tsp
  • Garlic chopped 1 tsp
  • Crushed red chili 1 tsp heaped
  • Salt ¾ tsp
Method
  • Heat ¼ cup oil in pan. 
  • Add 1 tsp cumin seeds with sliced onion.
  • Fry till transparent. 
  • Add 1 tsp crushed garlic and fry for 2 minutes.
  • Add ¾ tsp salt, 1 tsp crushed red chilies and chopped tomato.
  • Fry for 5 minutes.
  • Add ¼ cup water with potato cubes and chopped maranth leaves, cove and cook on low flame for 20 minutes till potatoes tender.
  • Serve with puri.
